No spinach? Restaurants will add more lettuce. Until the source of the E. coli strain infecting part of the nation's spinach supply is identified, restaurants around the country will be using creative substitutes from arugula to broccoli, and encouraging restaurant-goers to try new fare.   USA TODAY
